Was bored one night with nothing on telly and found myself high in the channel index on the Food Network. Watched some rather large Texas boys cook the most mouth watering foods, which prompted me to start researching into cooking myself. Considering a WSM at the moment as gets good reviews and doesn't appear to produce vast amounts of 'smoke' to annoy the neighbours!
I've already a two channel ETI thermocouple thermometer which I'm hoping I can purchase a couple of new 'oven' probes to help monitor the cook.

Okay not too far form me as I'm in Billericay, we have a few good butchers around shout if you need anything.

Hey there, I'm also new to the scene. I live in Braintree. I'm just wondering do you have any recommendations for butchers. Looking for whole briskets, pork butt, beef ribs and the like.
