Another couple of newbies from...Essex

Hi all, well myself and my girlfriend are just getting into smoking. We're in Braintree. We've invested in a WSM. Hopefully getting a first cook in this week! Seems to be a couple of good looking butchers close by in Great Dunmow and also Hughes on Broomfield Road, Chelmsford will cut a Boston butt and whole briskets and pretty much anything you want which is great to have close by.

Anyway, was great to find this forum, has been a great help already!!

Whilst having a brisket and butt selling butchers locally can I suggest you start small.until you know your WSM better.
