Brisket

Post by markd »

Going to be ordering a brisket for a large gathering, if you had the choice between the following 3 which would one would you buy, any pointers as to why would be appreciated also, read a fair bit about USDA (tom hixson's are 'choice' grade) is it worth the extra cost?

I've had USDA and Aussie from Tom Hixson and for me the Aussie came out better.
Admittedly I've only done one of each so far, but the point on the Aussie one was much bigger than on the USDA one, and that's the bit I want the most!

I prefer grass fed meat as more natural than pumping with grain, I know it has less fat/marbling etc just my 2 cents worth

Turner and George are one of the few that do Dexter

Supply for the USDA has been unreliable for a while however my preference is always Aussie grain fed.

Cheers for the input, looks like the Aussie is the front runner.
