I've always just taken a lemon, zested it, added salt, oil and thyme leaves to the zest, crushed it up and rubbed the bird.

Cut slits in the zested lemon, shove more thyme in the slits and bung the lemon up the birds butthole.

Then, and here's the magic... cook it!

always comes out lovely!

Stick some butter n herbs under the skin is a good tip. also brine over night or marinate in buttermilk over night like loads of people do in the US
