found this place a while ago,have never used them ,but they do boston butt,flat beef brisket,beef short ribs etc. http://www.meatpacks.co.uk/Pork/PorkBellyRibs

Well I did the ribs, they were spare ribs as he had run out of baby backs, but they were amazing. I used a rub from my Jeff Phillips Smoking Meat book, but I forgot to coat the ribs in American mustard first. I sprayed them with apple juice whilst they were smoking and it kept them from drying out. I'll definitely do them again!

The mustard is just to help the rub stick, you won't taste it anyway. I normally oil first then sometimes mustard to help.

I really wish that I'd had the guts to smoke the two rib beef forerib that I also cooked on the MasterTouch. I just had no idea about timings etc. Has anyone smoked a beef forerib before? It was about 3kg worth of beef. What should I be looking at for times?

Guess you need to decide how you want it, rare, medium, etc then just gonto that temp?

Sorry, yeah, I should have mentioned I want it rare to then let it rest for a bit. I was just seeing if anyone had a rough time estimate. I was cooking for my family and I knew the ribs would take about 5 - 6 hours. I'd have said about the same for the beef rib but if it takes something like 8 hours or so then I'd need to plan for it. If it's less than 5 - 6 hours then that's perfect!

if you have a costco nearby they do great pack (4 large sets of baby backs) which are vacuum sealed.

Always produce amazing smoked ribs - they even work in a weber kettle.

Oh I see. Wouldn't be long for rare I wouldn't think. Probably best to try it another day though if no one can help... ;)

From memory they are about £15 (NO VAT) for about 2.5kg
