I'm new to this forum. A northern boy who had to learn BBQ from my southern cousins. My efforts had a much more satisfying outcome when I started making my own dry rub. Basic rub: 1/4 cup brown sugar (sorry, American measurements), 1/4 cup paprika, 3 tbsp salt, 3 tbsp black pepper, 2 tbsp celery seed, 2 tbsp garlic powder, 2tbsp onion powder, 1tbsp red pepper, or more. I like cumin and criander to. You can add or take away ingredients and make it your own. Who needs sauce!

Great thread, very informative. Thanks.
It's interesting to read and, much like coffee, it's more complex than you first think. This should help though. Thanks.
