Pork shoulders have had the skin and most of the excess fat trimmed off, and are marinating in chili powder, salt, garlic granules and pepper.
Lamb shoulders have had excess skin and fat removed and are covered in salt, sugar, rosemary, thyme, lemon zest and garlic.
Short ribs have had the membranes removed, half are covered with salt, mustard powder, brown sugar, paprika and pepper. Other half rubbed with ancho chili, sugar, garlic powder, paprika, celery salt and pepper.

Smokers go on tonight.
Am feeling a little exhausted and need to rest before prepping the ribs!

Re: Wedding party
cheers
i now have 6 pork shoulders on the go, 4 lamb shoulders and approx 15 pieces of beef short rib cooking
next up is putting on the last lamb shoulder and then prepping the not so spare ribs. last year i found a smallholding farm with an abbattoir, and they can send me meat direct, cutting out the middleman. they only work with other local smallholdings and farms that treat their animals well. i had asked for spare ribs, but they are the most meaty spare ribs i have ever seen.
later i will bbq some chicken pieces and then grill sausages, and stuff for vegetarians (shudders)

Congratulations James, both on your nuptials and on one hell of a cook!
