Using a temperature controller

Post by Kickback »

I'm going to use a BBQ guru cyber q for the first time this weekend - smoking a brisket for a Father's Day BBQ.

I'll be using a weber smokey mountain. One question I had was can I skip the stage when you wait for the temperature to settle at the desired level before putting on the brisket? So I'd just light up a chimney starter pour it in for minion method, set the temperature and put meat on straight away and leave the device to do its thing? My reasoning is once you take the lid off to put on the meat the temperature will need to climb back up any way so can probably skip the step.

Grateful for thoughts.

Thanks

I always get to temp first. When opening to add meat lid will be up for such a short time that it should get back to temp really quickly.
