Tom Hixson St. Louis ribs
Has anyone tried these?
I've just received my smokers box from TH and when I opened it I initially thought they'd packed two boston butts however one of them turns out to be the St. Louis ribs! This is a big hunk of meat, the rib ends are visible however the rest of the meat is as thick as a boston butt, I can't see these cooking in the usual rib time, I'm contemplating putting them on with the butt.
Does anyone have any experience of cooking these particular beasts?

Can you stick a picture up at all? I've only cooked the iberico spares from TH but they cook fast

St Louis ribs are just spares squared up and made to look pretty AFAIK.
Shouldn't be that thick I wouldn't think.
How many bones are there? Sure they haven't put a jacobs ladder in or something by mistake?

Can't post pictures, something about the limit being full!
Looking at the side of the ribs the meat is about 15cm thick, it looks just like a boston butt with ribs! They look nothing like any ribs I've seen before, there's meaty and then there's meaty!

It's definitely not a bone in shoulder, the rib ends are protruding, they're definitely ribs. The label states that they're St. Louis ribs. It's a rack of ribs alright just unlike any I've ever seen before!

I've got some of these in the freezer as well. They are the meatiest ribs I've ever seen. 2 big racks. Will probably to them in the next 2-3 weeks.

6inch thick though? That's not meaty, thats a whole pig. Lol.
