I can see your pics! Very jealous.......if they are the ribs, I'd love to see the size of pig that it came from! :o

I had a cunning plan and looked on the net and worked fine, so must be a tapatalk issue?

Anyhoo, they don't look much like the St Louis rib pic on the website! Lol.

That is some pig! That's more what I'd expect from US hogs that they grow for much longer than us.

How many bones do you have in it? Is it a full rack?
If it's only 4 or 5 bones it could be a shoulder.

If it is ribs it's ridiculous. Lol. Should cook up lovely.

Be iteresting to see more pics when it's open.

Hi! I'm new to the forums :)

I got a Tom Hixson order last week, with St Louis Ribs in it and mine came in a long thin package with two racks of ribs laid one on top of the other. It looks nothing like the pics posted in this thread :o :lol:

The pictures look far more like the Boston Butt that also came with my order (currently smoking right now on my Kamado Joe).

I can't wait to see what the OP's cut of meat actually is :D

I'm no butcher but if that's got ribs in then DAYMN.

I guess this means that you can cut some belly ribs out exactly to your liking and still have tonnes of belly left to go towards sausages and the like
