Hi all
What's your advice if the meat ends up reaching the desired temperature way too early. Do I take it off and re-heat closer to the needed time? Do I drop the temp of the BBQ and leave in to keep warm? Do I just leave it carrying on at the slow cooking temperature?

Get a decent ice cooler box, line it with towels, take the meat off and triple wrap in foil then pop in cooler and wrap towels over. Heat will hold for 3-4 hours no probs
