Hello all, love my new wsm, christened it today! (in the blinking rain!) Thought my jerk chicken was nice on the one touch but this has taken it to a new level! Smoked four marinated chicken halves for just under two hours at about 275 degrees using oak and allspice berries. Lovely and tender with a nice pink hue to the meat and dark crispy skin. The rain deterred me from taking any photos but will do next time. Rice'n' peas, coleslaw and homemade jerk bbq sauce to go with, as the man on bbq pit boys says, mm mmmm thats good! ha ha. Going to try beer can chicken next, any tips would be welcome. :D

sounds great, the best thing about the WSM is it doesnt leak as much as the ProQ, therefore holding temps is so much more consitant, my phylosophy with BBQ, have faith in the Q sit back and let the BBQ work for you..........
