Steak on a Traeger
Hi
As I'm new to the smoking game, just wondering if anyone has cooked steak on a Traeger and what sort of results you achieved and recommendations etc?

There are a number of Traeger users on here and they all seem to report great results. Have you cooked on it yet?
Which model do you have?

Hi Adie
Thanks for the response, I have the 'Lil Tex' tried it 3 times now with mixed results. My first attempt was a cheap Tescos value uncooked and unsmoked gammon joint, smoked for 7 hours on low and finished with a honey & mustard glaze. It was without doubt the nicest bit of gammon we've had. Slightly disappointed with a whole chicken, but I don't think I smoked it long enough before finishing on high. Chicken Cordon Bleu was very nice but the pork & apple sausages, the flavour seemed too intense and didn't really enjoy them.
Still got the whole summer to practise though and really looking forward to it.

I've had smoked sirloin before and it was brill, it was done over a charcoal grill though. not sure whether your traeger can do that. Remember to keep basting the steak after you've got enough smoke on it or it'll dry out.

The Traeger will do either smoke, medium or high but I do have the option to have the BBQ running along besides it if needed. How long did you smoke the sirloin for and what did you baste with?

It wasn't me who done it Mark,iIt was cooked on a friends bbq. A few small chunks of wood on top of the coals to start with, seared and smoked the steak either side. (possibly 5 mins) He rubbed his finger on the steak to test if there was enough smoke. When he thought there was enough he took off the wood and continued to baste the steak with butter/oil and parsley , and black pepper, until done.....ended up with a subtle smoke flavour.

I haven't (yet) tried steaks on my Lil Tex, as I also have a Weber Kettle that tends to be used for anything that I want definite grill marks on.
However, over on pelletheads.com, there are a number of people who have been making modifications to their Traegers to allow them to cook fast and high as well as low and slow. Quite interesting reading.
On a related subject, I had tried to get hold of the Traeger cookbook, but found it wasn't available in the UK. However, I see that they now have it up on their website as a free download. No idea how long that has been there, but for a 103 page recipe book geared to the Traeger, it's got to be worth a download.

I have been an avid user of Traegers for a few years and they seer really well, leave it on high for about 10 mins to really heat up, you will find the right hand side of the grill is hottest, once you have seered both sides move it to the left of the grill and leave it until cooked to your taste!
