The WSM currently cooking me the meatiest ribs i have ever seen courtesy of my local butcher they are currently being done with a kansas style rub:
Kansas City Rub
Ingredients:
1/2 cup brown sugar
1/4 cup paprika
1 tablespoon black pepper
1 tablespoon salt
1 tablespoon chili powder
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon cayenne
so will let you all know how they went.
My first question is with BBQ sauce. Are there any good UK shop based BBQ sauces that can be relativly easily sourced ?
Second question... i have a new maverick et 732 coming from the US how will i put the probes in the WSM and how do others do this? ie do i pop them through the vent? as that seems fine for the BBQ temp but not the meat where do i put the prob in for the meat ?

well i was going to order these however i noticed that on product info fot them that it says ...
The WSM Eyelets were designed to specifically fit into the grill holder brackets on the Weber Smokey Mountain. These eyelets make it easy to run probes and/or wires into your cooker without having to go through the access door or lid. This kit comes with 2 eyelets, flaring tool, Allen Key and installation instructions. (The eyelets fit through a 1/4" diameter hole.)
NOTE: The Maverick ET-732 has a larger probe and does NOT fit through the eyelet holes.

Well spotted. I just tested mine and the knuckle on the 732 is larger. The probe itself fits through the apperture. Not got pliers here to test the usual trick but I still think it would be a very tight fit. I think I may opt to just drill mine and replace the bolt for the upright.
