Chipotle!

Post by blunder1983 »

Hey guys!

I'm really new to smoking (my first time is currently ongoing, chicken is about hmm 1 hour away)

I love the dried chillis you can buy at supermarkets and they're phenominally expensive so I thought I'd ask the experts about trying to make my own!

Google reveals you need a really clean smoker and its a really long smoke (like 20hours?) I'm thinking perhaps you could dry them in a dehydrator first and then smoke the dried chilli? Or would that just fail to get the awesome smokiness? The amount of coal you need would mean i think it'd be cheaper just to buy them! :(

I'm really into my chillies and although I'd love to make my own chipotle's, I'm not so sure its good value for money.
For a start you'd need to grow your own Jalapeno's and ripen them to red.
Then you need a cold smoker, I've tried indirect smoking overnight and they were, to be honest, a bit rubbish. They take a very long time as they are thick skinned.

Alex from the Upton Cheney Chilli Company makes his own, you might be interested in the process..

I seriously doubt you can dehydrate them first, I don't think it would then take on a flavour in a smoker.

Saying that, I grow my own jal's and am awaiting a smoker in the post, no doubt i will give it another go one day.

I bought a fresh mixed pack at Bookers a month or so ago, chucked them in the smoker for about an hour to take on the flavour - then dried them on the kitchen window sill for a few weeks - taste pretty damn good.............also a self confessed Chilli freak!!

We also got some Chipotle powder on eBay - expensive, yes - but fricking AWSOME taste!!!

Heat and meat.....bring it on!!!!!!!! :D
