Sourcing Whole Brisket
Hey there,
I've found it nigh on impossible finding a whole flat brisket offered as a standard cut anywhere, I assume people are getting these to order from a butcher.
Even so any I've asked have mostly just pointed me at essentially a rolled brisket, unrolled. Like 1.5kg.
I did manage to get brisket on the bone as well for a few quid but it was a pain to slice and smoke correctly.
What are your opinions on trying the unrolled option?
To be fair 1.5kg is probably more suitable for my needs than 5.

Where in Surrey are you, there may be someone on the forum that can point you to a pre-trained butcher.

Give Ian a call at Roberts in Chertsey to order a whole brisket, he supplies alot of the comp meat and knows whats needed his number is 01932 562749
Reference the rlled brisket, i have cooked it a few times for practice but they are generally hacked apart which means more opperutnity to lose moisture during the cook. The results are ok though.

Thanks great to know, I'll give him a try for a big cook.
Still need a "lighter" option for regular use so think I'll order a cut unrolled and give it a go this weekend.
28 day matured, 1.5kg, £9, pretty sweet.

When I bought my brisket they had plenty in stock but he did say to give them a few days notice in future to save disappointment. A decent butcher should have several beef carcasses in the walk in fridge and should be able to sort you a brisket with a day or two's notice. I suppose there aren't going to be many people wanting a full 6kg brisket very often so the likelihood of being able to just call in and pick one up will be slim.
Mine came on the bone but I asked the butcher to remove them. I then trimmed the skin of and left as much fat as possible and it was ready to go. It sliced lovely and the sections where the ribs had been removed actually crated more surface area for the smoke to penetrate.
I paid £15 for approx 5.7kg on the bone.

Fantastic price for on the bone brisket, Piad today £25.00 for a 10 1/2 lb brisket off the bone. In the fridge at the moment with dry rub applied and ready to go tomorrow night. As for getting it from my butchers ( Marlows in Ashford Kent) I gave him three days notice. When he got it out of the fridge, he asked me "how much would I like cut off", I replied "none, I'll take the lot". So you don't have to buy a whole brisket if your appetite isn't as big as mine. A Good butcher will cater for your needs, not his.

Yeah it was a good price. I installed a wood burner for the the guy who owns our butchers so I seem to have gained a lifetime of cheap meat. It came to £20 on the till and he did me it for £15.

I still don't know what I'd do with it all after a modest cook yet though, the rest of my family are not as big a fan of brisket sandwiches and chili as me..
P.S ended up with even lighter option in the end for tomorrow... chicken thighs/legs and a rack of ribs...
Ribs'll do me fine, see what they think of some mild jerk chicken then work em over to Texas eventually!
Time to read up on my marinades...

I'm the only really lover of BBQ in my family. There doesn't seem much left when I'm finished. But a lot of of people bag it up, freeze it, then boil it it the bag when you want to eat it. maybe someone else can help you out with that.
