The only thing I can add is the "Heston" version is done at 50c in an oven, to an internal temp of 50c. He then lets it come back to room temp before searing in a cast iron pan for 4 minutes (2 per side) which has been preheated for at least 10-15 mins. Maybe the second cook should be longer?

Ah ok - I'm pretty certain that the searing part was too short - definitely will increase that next time - cheers.
