Restoring Bark on Brisket

Restoring Bark on Brisket

Hi Guys,

I have the pleasure of BBQ'in some brisket today. About 3hrs in and I hit the stall so wrapped it. What i did notice is that i didn't have a great deal of bark this time round. I am using a ProQ elite so i'm guessing its the water pan thats limited the bark. anyway, id like to restore the bark so do you think it would be okay to unwrap it near the end and stick it back on naked for a bit?

Well its been a few hours now in the crutch. Got to 180 so i decanted it from my foil wrap. Applied some extra fine rub with added molasses. Back on she goes. See how this turns out.

My own little thread. Anyway, the answer is yes, yes you can get the bark back. Came out great.
