Low and Slow - Individual Spare Ribs?

Ok, I've had a shocker.

The missus went to the butcher to pick up a whole pork shoulder and a full rack of spare ribs I'd ordered...unfortunately whilst at work and in a meeting she calls me from the butchers...I can't take the call, uh oh.

So the ribs have ended up being separated into individual ribs and the wrong bone was cut out of the shoulder...but I'll not worry about the shoulder as I've smoked a boneless shoulder before. And I thought it was just men that didn't listen to instructions! I clearly said to her...oh nevermind, I'll write it all down next time! :roll: :lol:

As it happens I've got more ribs kept whole, 2 slabs of back ribs and 1 spare ribs that I'll smoke.

So my question is...what can I do with the individual ribs? Can I smoke them low and slow? Would they dry out? If I can smoke them, any idea for how long and how to test for when they're done? Is there something else I can do with them?

If you've got a Kettle BBQ i'd be tempted to make a pile of them together and cook them indirect adding wood like you normally would and then mix them about every hour or so.

I saw the BBQ pit boys do them this way and i did some Mexican style singles which i cut down to make little rib bits this way and they turned out really good.

You should be able to tell when they're done as the meat should shrink and leave the bottom of the bone exposed.

Thanks for the advice Ed...I can see a pile of them working, I'll just have to see what happens tomorrow. Either way, I've got a lot of ribs!

I know, I know...like I said, next time I'll write it down, can't get to the local butcher in the week due to work :x

I'd suggest freezing them and then once per week take one out and drop it down the back of her jumper. She won't let the butcher cut the ribs again :lol:

I can't bring myself to put them down her top, but they've ended up in the freezer :lol:

I'll probably just bung them in the smoker the next time I fire it up and then forget about them...hopefully they'll be a tasty accident.

Let me know how it goes!
My loving mother gave me about a dozen single ribs yesterday for the smoker. She was so excited she had got them and asked the butcher to separate them to save me the trouble.
