hey,
be interested to get your thoughts on this, every batch i've done has tasted great but been silly fall apart to the point that i cant really slice them. will reducing the foiling times result in tender ribs with a bit more bite? or should i be looking at finishing off direct to achieve a crustier bark?

well iam new to BBQ but i know the longer u leave in foil the more tender the meat will be
i like mine Bite off bone not fall off. i never foil 4-5hr for baby bks 5-6for spares but
cut your time in foil down to 1 hr 3 -1 -2 or till just right. Sure other guys will add more infor for u :)

Personally i'll smoke them for 3hrs, then foil the ribs and put back on the cooker, check the ribs after an hour and then check them every 30 min's untill you get them as tender as you want. Once they're as tender as you want, take them out of the foil and suace. You're only looking for the glaze to set on the ribs so i'll only put them back on the cooker for 20 min's. Finally let them rest for 5mins before cutting.

When wrapping why not sprinkle some light brown sugar, pour a little honey and a couple of nobs of butter on the foil. Place the ribs on top facing down, wrap and follow swindon Ed's tip.

If your doing more then one rack, experiment. Leave one plan or even pour a 1/4 cup of good quality apple juice inside.

thanks guys. for home only doc! i haven't got the time or knowledge for competing, but hopefully will visit a couple this year.

In that case *and this is only my opinion* I would skip most of the above including the sauce. Start with the basics like a god rub then work into the things like foil, juice, butter and all that business. Enjoy it first off by understanding the basics then get into tweaking it. Sounds like a longer road but the flip side means more Q time.

a very generous man from america took the time to ship me a box full of different rubs as a gift so i am having loads of fun with that at the mo. byrons butt rub is awesome isn't it? anyway, i take your point - the one thing i havent done yet is smoke without faffing about with foiling, spritzing, saucing etc. will let you know what happens. thanks again
