Grilling on a ProQ Excel

Hi Guys,
Has anyone ever grilled on an Excel 20 by moving the charcoal pan up onto the second grate instead of just removing the stackers. I'd like to be able to just grill at it's normal height as I don't have anything to stand it on.

Or

Has anyone ever tried just taking the water pan out and doing it that way. Would the heat carry all the way up and still be hot enough for standard grilling.

I've grilled on the excel before by just removing the water pan. Food cooked through nicely. Ever so slightly slower than if it was right above charcoal but with no worries about flare ups.

When you're done with the grilling, remove the stackers and lid and you got yourself a great little fire pit.
