Had a look around and couldn't see the relevant info, so thought I'd post a new topic. Put it in here as its primarily to do with low and slow......

I'm doing a smoke next Friday and plan on doing a brisket, a pork shoulder and some ribs. My main question is with the brisket. I'm wondering what the quality is of the full rolled briskets that Costco sell ? They seem to have a good array of nicely sized brisket cuts, but my internet travels have told me that I should be using choice grade or above. Has anybody used a Costco brisket before and/or do they know what grade of beef Costco sells ?

Also, has anybody used their ribs before ? I've got four sitting in my freezer right now.

Will prob get my pork shoulder from a local quality butcher, I could probably get the brisket from there as well if need be, although I was in the other day talking to them, and it was as if I was talking a foreign language when I was trying to explain a 'whole packers brisket' and the fact that I wanted to bbq it amazed them :roll:

Never seen brisket at Costco before - I must have a closer look :-)

You'll be looking at an american website if they're talking about choice and so on but in the UK beef isn't graded in the same way as it is in the US. I only know of one butcher in the UK who does!

The Costco briskets they had at Grillstock didn't look great, but i didn't cook one as i had my own with me. I've cooked some of the Booker rolled brisket flats in the past and they've come out good. Just make sure that the one that you pick is nice and thick and you should be ok.

They sell them rolled, I've been told (by the rep at Grillstock) that they will bone one for you without rolling it with 48 hours notice. I've asked twice now and still can't find anyone from the group "they". In other words no-one at Watford could tell me who I needed to contact to arrange it.

As for their ribs, there isn't a lot of meat on them but the flavour is nice and they aren't too expensive around £2.50 ish a rack.

I was in Costco at the weekend and priced up some meat, to be honest my butcher did the brisket for such a good price (slightly more expensive) but I had the luxury of seeing it flat out.

Saying that the Costco meat I have bought has always been good

I've done 2 costco briskets. They're tough to do. I've found there's not enough marbling so it ends up little dry for my liking.

Has anyone tried brisket from Booker?

They sell whole rolled £5.99/Kg and half rolled £6.49/Kg. Is there any difference besides size?

Yes i've cooked them a few times and i've had some good results with them. I'll be using them for my comp' practice cooks over the winter.

Cool - is there anything special to ask for? Do you just get a whole rolled brisket and unroll it?
