So I took about 3lb of Topside

I sliced it fairly thin and left it in a ziplock over night in a mixture of Soy, Worcester Sauce, Salt, Garlic, Onion powder and Chilli flakes. Next day I set the Egg up with an empty hot chocolate tin with the bottom cut out and made a small fire using some half burnt lumpwood. I lit one piece of coal with a blow torch and dropped onto the tin.

Removed the meat from the marinade and blotted with kitchen paper (I did this early in the moring), then stacked inside the Egg. closed down the vents to nearly fully closed and left for 10 hours

Mmmmmmmmmmmmmmm. What temp did you have it on for 10 hours?

It was about 150 F

Agree on the sugar, I don't think it needs it, I added extra chilli flakes to mine so it has a nice kick...
