Sea bass fillets

Sea bass fillets

Got some sea bass fillets, got a cedar plank (which is smaller than I expected), cherry and hickory chips and my gas BBQ.

Can anyone suggest a recipe for these fillets as I'm new to gas.....Something to impress the missus and kids!! Last attempt at fish wasn't great.

Hoping to catch Bass yesterday at Deal pier, but only manage a couple of undersized whiting.

I was going to cook the on the Q with a lime and chilli marinade and a little of cedar smoke for added flavour.
1/3 cup of lime juice
1 chopped clove of garlic
1 cube inch of chopped ginger
1 tablespoon of soy
1/2 chopped chilli
1 red onion chopped

As you have gas, put some soaked wood chip in foil and wrap it up into a parcel. Pierce a couple of holes in it and place it on your Q. This will give you the smoke that you may be wanting?

Is smoke necessary when planking? I thought that was the point of it - to get a wood flavour.

To plank or not to plank, that is the question. Is it nobler to add a marinade or just add salt and pepper?

Eddie done the same recipe in a preheated oven fillet only for 15 mins in a foil parcel at 170 how would you recommend to do on plank or same on the bbq

Tried this today and was very good. Fish was full of flavours!

I preferred not to plank sea bass as I do catch quite large specimens, I like the char effect that direct grilling gives. I have planked smaller ones and served them still on the plank as the skin tends to stick to the wood.
Rick if you haven't planked before? Soak them in warm water for an hour and cook over direct heat and cover lid. No reason why the marinade shouldn't work with both as it is to enhance the flavour.

Have planked salmon just wondering what time and temp to do sea bass fillets

Thinking about it foil parcel and treat same as I've sounds the way to go or just stick to the kitchen oven as my recipe is pretty juicy
