Now - there's a question!! :)

Well, background is I'm madly in love with BBQ, but also my OH so we're getting married (my OH, not the BBQ...)

My brother lives in Austin, TX and ever since I visited I fell in love with all things long and slow cooked. Brisket with a good dry rub is my fave, and I've been given control of the wedding menu -woop!

There is a great hog-roast guy I know but I'm not sure if he could smoke enough brisket in there to server 100 people. I'm thinking it might be possible to cook the brisket in a classic oven for about 7-10 hours, then finish it in his spitroaster burning smoke for the last bit (or vice versa as I believe possibly the smoke penetrates more at the start than the end.)

Does anyone know anyone that does mobile proper BBQ smoking?

For those who don't know me, don't worry, I've only just joined, but here's a photo of a recent brisket I did to whet your appetites for hopefully more I'll add at some point.

There are few of us who do wedding catering and have big enough cookers to do brisket for 100+ people ;)
