Rib racks

Post by BRUN »

I've just bought a Weber rib rack as next week I might need to cook about 8 racks of ribs, has anyone used one before and does it alter the cook in any way. I usually foil meat side down for an hour not sure how that's going to work with it on its side.

The weber rack only has 4 (or 5) rack pieces unless Im mistaken. So you can get 5 ribs standing upright (with one leaning on the back) or 6 (if its a 5 racker). It doesnt dramatically change they way in which the ribs cook in my experience

Only use the rack for the first part of the cook. When you foil them you can stack them in a square or triangle chimney and they will cook fine. You're problem will come if you want to rub them down with a glaze and get them all back on after but I would just stagger the finish (or serve some with sauce on and some without).

What are you cooking them in by the way (as you could finish the racks on both levels of a WSM)?

they will be done in my WSM 47cm, the size of the ribs ive done before id not be able to fit more than 3 per level without a rack

ive just seen that Macs BBQ/Pro Q do a raised grill which would have been the better choice, im told it fits the WSM too, wish Id seen that earlier

Not used a Weber one but I bought two non named ones from somewhere (can't remember where), they officially hold five racks of ribs.

I don't know what smoker you have but on my 57cm drum I can do eight 1kg racks of ribs per shelf. I put the five in the rack, lean an extra one on the end, then a rack on either side leaning against the ends of the other racks.

I've been using one of those cheap Brinkmann racks which can hold 5 at a stretch. After foiling I'd put the ribs back in the rack as before, and didn't notice a difference in the end result.

Interested to see how they that works out and if they cook at different speeds depending on which layer they sit. Also interested to see how easy it is to get access to the lower two layers during the cook.

How high in the lid does it sit?

Can you post a pic as I am genuinely interested to see how it might fit and buy one.
