Hi All,
I am cooking a Beef Forerib next weekend and I'm trying to determine the cook times for this monster based on its weight (12kg) and the cooking temps (Around 275F) I want to serve this medium rare and have so far only been able to come up with cooking times based on 190C.
Is there any specific formula/rule of thumb I can use to calculate what times i need?

Found it!
Based on cooking temps of 325f which I can easily achieve in my Big WSM, the cook time should be 16 mins per lb meaning the total cook time should be around 6 hours 45 min.
This unless anyone has any advice to the contrary.

Yeah, all the Foreribs I've done before with Feeney and the ones I have seen the guys in the states do seem to be very rare for the palletes of the party that wants it so I need to determine what they consider medium.
Personally I don't even need beef cooked!
