Jacobs & Flanken Ribs - opinions?

Got these from a butcher - no pricing yet, just what he could potentially get.

Does anyone have any opinion on either - is one better than the other, or is one perhaps better value - particularly if cooking low/slow?

Jacobs ribs I think are short ribs.

Can confirm that Jacobs are the same as Shorties, would highly recommend giving them a go. I prefer to get them chopped individually allows more surface area for the rub and smoke and reduces cooking time.

Flanken is the way in which the rib is cut i e cut across the bone about quarter inch thick used in Koreon dish Kalbi for example

Apologies going a little off piste here, but what are baby back known as in the UK, and am I correct in thinking that they are just a normal rib rack with the bottom part (containing all the cartilage) sawn off?

Baby back ribs are really only pork.

They are loin ribs - but usually not sold here as the loins are sold as chops.

You can get frozen ones though, but not as much meat on them as you get in the USA. Meatpacks apparently sell nice frozen ones, and booker sell passable ones too.
