Beef Short Ribs

Rack of beef short ribs rubbed and ready to join his mates in the smoker. Went in around 3ish. I'll take a couple of pics when they're done.

Around 5 hours later, internal temp of 204f. Pellets used, mesquite

Hi

Are these the ones from Bowlams that he sells pre-cut on the front right of the butcher counter or other?

As you walk in, first long fridge/counter on your left, at the back.

That looks great - what temperature did you cook them at?

Hmm
He normally just has "Plate" at the back of the first set or fridges or we on the same thing here just trimmed?

Those are the ones trimmed of the first layer

spot on wasnt sure what to do with them got 2 in the freezer not tried them yet
