Re: Injection marinade for Pork Butt
The BBQ Guru posted this recipe for a great pork injection solution. The secret here is to add your pork rub to the mixture to get the flavor inside and out.
INGREDIENTS:
• 1 cup apple juice or cider
• 1/4 cup cider vinegar
• 1/4 cup water
• 2 tablespoons Worcestershire sauce
• 1 1/2 teaspoons pork rub (use the same rub as on your meat)
• 2 tablespoons corn syrup
PREPARATION:
Powder the rub using a mortar and pestle. Inject into pork butts. This will make enough to inject 1, 8-pound pork butt.
I have used it and it does a great job.
