Cooking time for a small pork shoulder

Post by DeepThought »

Hi

I'm getting a pork shoulder on this weekend but it's a bit smaller than I'm used to cooking so wanted your opinion on grilling time.

How long do you think it'll take to get a 1.8kg piece up to around 90 degrees (C that is)?

I'm planning on using the snake method though may switch to minion if I'm having trouble keeping the heat up since the forecast is a bit chilly this weekend. Aiming for a grill temp of 110 to 120. I'll foil it after a few hours once I've got some bark going on and rest for at least an hour in the foil.

Any opinions are appreciated.

Cheers

Hard to say exactly but I'd reckon on anything from 4-8 hours - probably end up somewhere in the middle. If you're wrapping that will speed it up of course.
