Hi guys am doing a bbq on Sunday for the wifes birthday. I have ordered a full brisket, a pork shoulder and 2 racks of ribs. I will be using my PBC, question is do i put it all on at the same time and take off and wrap as each get to temp and store in cool box wrapped with towels or stagger start times so they finush roughly same time?
Opinions please.

Depends how big the difference is in sizes.
If they are fairly similar just chuck it all on.
Bit of resting is good anyway. You can always reheat if you need to.

I would aim to have the brisket and the pork shoulder cooked ahead of time and hold/rest as you described. The ribs should need less time (exact time will depend on what types of ribs they are and whether you plan to foil partway through the cook).
