Hi all,
I got two pork loins cheap from Makro today as the date is up on the 29th.
I intend to wet brine/cure these for four days before smoking on my Yoder.
Now... should I leave these until the 29th and then put them in the brine/cure and take out four days later to smoke, or, put them in the brine/cure now, take out in four days time and then leave in the fridge until smoking next Sunday?

Morning, personally would brine them now as a preservative, your cure time does sound a little short though. I would usually dry cure for 2 weeks....hav never wet cured though

Thanks Tiny.
The ingredients and method were from a BBQ video on YouTube.
It said 4-5 days in the text but the guy said he'd taken them out after 4.
I'm going to brine them tonight. Friday night will be 4 days so I'll just take them out Saturday and smoke them low n slow.
