Hi Jim, just down the road in Hermitage. Let us know if you find any "gems" meat-wise round here, won't you? I've been to a few farm shops where the prices made my eyes water. Usually rely on trips to the wholesalers... there's some decent butchers setting up in the market place some days though ...

Welcome to the forum, what part of WA are you from? I had the pleasure of visiting Ft. Lewis for 3 weeks. Lovely part of the world, especially around the Puget Sound. It even rained loads, just like home! :lol:

I'm also considering a new smoker, but I'd love to know id there's anything like an insulated bullet smoker? I love the capacity of the Excel and WSM, but I'd love the insulated-ness of a big green egg/ big steel keg for efficiency. Does something like that exist?

I made 1.5l of this in early February and have used most of it!

For added "artisan" feel I used home smoked scotch bonnets but you can use chipotles (they'd probably be better anyway )

Thanks for the feedback. I'm spending my afternoon on a turkey hunt I suppose!

Seems a little odd. I guess it may be freezer space or something, but they're obviously still killing them all year round as you can get the breasts, legs etc readily.

I'll take the leg wisdom on board. Might just do ...
