Have got a mutton shoulder and am smoking it on sunday, having never done this before does anyone have any suggestions for a rub / marinade or a flavour profile that will go with mutton. Dont know if lamb favourites of lemon garlic rosemary will cope with mutton or will a more vinegary / sugary ...

Having just purchased and got delivery of a maverick 732, how does anyone who's got one run the wires into their smoker ??
I ran mine through the top vent of my Frontier as was in a rush to use, worked a treat but was a bit ungamely wondered if anyone has any other ideas.
