Yes I'd have thought that but my lid thermometer is consistently lower. I might replace it with one of the Man Law thermometers I read of on another post.

I have a 733 and it seems to work just fine. I find there's a fair difference tho between the WSM lid thermometer and the Maverick readings. The lid temp reads about 20 degrees or so lower than the maverick.

Good luck. I did a turner and George packer last weekend and it didn't come out how I wanted.
Where did you get the meat from and what temps are you running at?

I got the meat from Pettit my local butcher. I set the WSM up to run at 250f.

Can I ask where you got your probe clip from? Hope the ...

I'm coming up on three hours into a 7 hour smoke of a 6lb piece of brisket. Will be removing the meat to marinade and wrap shortly. Hope all goes well. :)

Had no problems getting a nice piece of brisket here in Grimsby. http://www.johnpettitbutchers.co.uk/

The butcher bought out the entire brisket and asked how much we wanted.

Will do. It's the one from the Weber Smokey Mountain cookbook. It's only the third time I've used the smoker but the first couple of times were successful.
