I just bought a kelly Bronze for Christmas and i don't have the confidense to smoke it. Too expensive to muck up.....

Yes I remember those days when, as a trainee butcher, I went with the boss to see hundreds/thousands of Christmas dinners running around the fields.....proper free range. Only problem you had to take some of all sizes from 10Lb to 28Lb + old Toms
Guess who was eating Turkey forever after Christmas. Then of course there were ways around getting lumbered with one, some desperate customer would always turn up, late on Christmas Eve for a turkey
