Pulled pork, brisket, maybe hot links, Memphis slaw, maybe beans, 2 or 3 sauces (Carolina style, Memphis style and maybe a Cranberry based xmassy one).

Long term forecast is predicting snow on the Saturday night when I'll be cooking. Should be fun.

I'll make up the spice mix and give it to a butcher. He'll knock up 5kg batches for me.

I'm not sure about the links, tbh. I think the brisket and pulled pork will be the big attraction on a UK Farmers market as they are out of the ordinary, whereas hot links will be 'just sausages'.

Having had a look at the market guide apparantly there are already burgers and hot dogs there (unless that is you under a different menu)

There's a butchers stall that knocks out bacon rolls and a fish & chip van, that's it for hot food.

I'll be getting plenty of photos.
