suggested recipes for Fatty's

Post by kwazulu »

Hi folks, I had a bit of a dig through the Recipe Bar on the forum but didn't find what I was looking for so can anyone suggest any good recipes for fatty's?

also, could someone please clarify for me, does one have to use sausage meat in these things? or could you use pork mince?

Thanks.

oh, I did find this one on searching the forum http://www.sternosbbq.com/2011/06/fatty.html but still had questions :)

Needs to be sausage meat as pork mince is too lean and will end up being dry.

I think the beauty of fatties is that once you've got the sausage meat it's pretty much anything goes

Just don't mix pepperoni and chorizo, the oils in them don't mix very nicely.

I had a search for fatties and didn't find many recipes, on youtube there is a few people cooking them with all different fillings and like Robin said once you have the sausage meat then anything goes.

Fatties are the work of the Devil!! Here is a link to Smoking Meats Forum fatties section, there are more than a few ideas among the pages.

You can really put anything in them that you fancy, one I made recently was made with some left over rice and cheese - it was really good!!!!!
