What should I try first (low n slow)?

Feel free to ask any questions, one of the experts will certainly respond, don't be afraid to ask anything, we were all beginners at some point.

I am now the proud owner of a Weber 57cm One Touch Premium - had a couple of little BBQ parties so far which have been really successful. I've been using the 2 zone method and found it a lot easier to cook food nicely than other BBQs I've used in the past - had loads of great comments on the food from friends etc.

However, I've just done (home-made) burgers, sausages, kebabs (including a delicious chicken satay) & veggies etc so far. Oh and some baked camembert with herbs & garlic. :)

I really want to have a go at some low n slow style cooking and smoking. Currently thinking about doing pulled pork but I'm open to suggestions. I'd quite like to try something that's not going to take more than 3-4 hours to start with, so I'm guessing I shouldn't get a massive bit of meat. What would be a good thing to try to start off with?

done properly, pulled pork will take more than 3-4 hours

Get a rib rack if you're doing ribs. Makes life easier.

If you get proficient at chickens, give the Xmas turkey a go too. I did this last year and it came out very nicely indeed.

+1 for ribs!

And whilst you're at it - throw some sausages on to cook indirect alongside the ribs. Takes about 40 minutes at 250F and you'll never cook sausages any other way after tasting them ;)

Listen not to these people, they lack testicular fortitude, I suggest whole packer cut brisket or an entire suckling pig. Or a full size pigs head.

Much manlier.

But if it is ribs you want then a full rack of beef ribs, and I mean a full rack is the way to go, you might struggle to fit it in the kettle though!

Seriously, the chaps have already covered it I would offer up chicken thighs as well but skinless as if you are in the 250f range the skin is rubbery <insert non pc joke of your choice here>

Start small and enjoy!

Ok thanks everyone - seems like ribs is the clear winner!

I did see some nice looking beef ribs in my local butcher the other day.

Go with pork ribs, they're cheap (£2.50 form supermarket) and don't need to cook for so long.
Personally i would use the snake method as it's very easy to controll the temp and there isn't so much charcoal so that keeps costs down too!

I set the snake up around the outside of the kettle 2 briquettes wide by 2 briquettes high and add 6 lit coals to one end to get it started, put some wood at the beginning and then 1/4 and 1/2 way round and that'll give you enough smoke but not too much!
You could try it with no wood at all to see what it's like , it'll still have some smoke from the coals which is why IMO i like coal fired over gas :P

Try googling snake method and also the 3-2-1 method, there are some good vids on youtube too.
