Just a couple of pics of the pork shoulder I cooked today, was probably one of the best I've done so far.
UDS sat at 230-250F the whole cook, what a machine.

Well I cooked with it. Used it for pulled pork. Tasted nice wasn't bitter. Tested like a really mild smoke lighter than cherry. Was good

My shoulder is off an resting, UDS sat at 240F all day. Wasn't in a rush so left it slow.

If you want the food to be ready for 6-7 then I would definitely cook at the higher temps mentioned and wrap when you get to around 165F/74C. then let it chug along to to 195-210F/90-98C. But don't rely on the final temp, the pork will be done when it probes like a hot knife ...

Identify my wood.
Hi all,
Don't know if you will be able to help, but I got given a bunch of wood from someone at work. He doesn't know what type of wood this is. Its a long shot but could you guys have a look at my wood and tell me what it is? And if its good for smoking.

I've never used a rolled pork shoulder before as I've always been able to get bone in ones, but atm Tesco have rolled shoulders at half price, so I can get a 4.5KG shoulder for about £10-12, which is pretty decent.
Have many people here used them? If so what have your results been like?
